Three Michelin Star Vegetarian Tasting Menu at Oustau de Baumanière by Chef Glenn Viel.
Chef Glenn Viel is the head chef at restaurant L’Oustau de Baumanière in Les Baux-de-Provence, France. After joining Chef Marc Marchand at Le Meurice in Paris in 2000, Viel set out to cook at a variety of restaurants in France and abroad. Among them Plaza Athénée (under Jean-François Piège), the Hyatt Paris Madeleine, the Hyatt Regency in Casablanca, Morocco and Monte Cristo in Le Castellet. At age 28 Viel became head chef at Le Peron in Marseille, his first time in this position, and earned 1 Michelin star shortly thereafter. After that he takes the helm at Kilimandjaro in Courchevel, where Viel and executive chef Nicolas Sale were awarded two Michelin stars. Viel stayed in Courchevel for a little while longer and became chef of Cheval Blanc, which also held two Michelin stars at the time. Since 2015 he is the head chef at L’Oustau de Baumanière, where he was able to achieve the ultimate accolade of three Michelin stars in 2020. The wine cellar of the restaurant is no less impressive, boasting more than 50’000 bottles with its main focus being France. The restaurant is part of the vast compound Baumanière, a Relais & Châteaux establishment and five star hotel owned by by Jean-André Charial. Several historic hotel buildings, two restaurants, a spa, a Chocolate Factory and vast, beautiful and wild nature are part of Baumanière. Additionally, Viel has his own an organic vegetable garden, beehives and an educational farm on the premises.
Besides being a three Michelin starred chef, Viel is also a member of the jury in the TV show Top Chef in France.
